You're right that there's no way to reset this; there are 4 hardcoded option sets for formatting concordances (ascii, html, sgml and latex modes) but / is the p-attribute separator in all of them.
Unfortunately the way all this is handled in the code makes it rather more tricky to have this as a changeable option, although clearly it would make sense. No quick fix, alas!

Hello,
As far as I can see there is no option to change the '/' separator between
attributes as in
mice/NNS/mouse.
It happens from time to time that words contain a forward slash which makes
postprocessing of CQP output more complex.
It would be great if there was an option to set the separator to something
more obscure like "~~~" (for example) to simplify postprocessing scripts.
Waiting for the official 3.0 release ;)
